Fried Chicken Burger

Recipe Ingredients -

2 large chicken fillets, with no skin or bones
4 ½ oz flour
2 eggs
¼ teaspoon cayenne pepper
Salt and pepper to taste
2 large burger buns
Mayonnaise
1 tablespoon vegetable oil
2 lettuce leaves
4 tomato slices

 

Preparation:

Slice both chicken fillets horizontally. Place them in a freezer bag individually, and flatten them with a meat mallet.

Season the chicken breasts with salt and pepper. Add cayenne pepper to the flour as required, and add a teaspoon each of salt and pepper. Mix the ingredients well.

Break the eggs into a bowl and lightly beat them.

Dip the chicken pieces into the egg, ensuring they are totally covered; drain off the excess egg and then roll them in the flour.

Heat the oil in a pan over a medium to high heat and fry the chicken on one side for 3 to 4 minutes.

Turn the chicken over, and turn the heat down to medium, and fry for 6 to 8 minutes on the other side or until the chicken burgers are cooked with no pink inside. It is important that juices run clear.

Serve the fried chicken burgers in the burger buns with the lettuce, tomato, and mayonnaise.
